With exit criteria you know, when your task is complete in order to satisfy your client's needs. Sometimes tasks can be not really clear or vague, so exit criteria help to understand, what information is needed and make all your work more specific.

Exit criterion is used to determine whether a given test activity has been completed or NOT. It can be defined for all of the test activities right from planning, specification, and execution. It should be part of test plan and decided in the planning stage.
