Its a secure tunnel created between two internet connections or devices, i.e,

Point 1. Your home network and Point 2. Your office's network
or
Point 1. Your home computer and Point 2. A server at your office

VPN = Virtual Private Network.
It makes a scrambled way amongst you and some end point. You seem, by all accounts, to be originating from the endpoint. Your ISP and any other person can not see what you are sending through that way because of the encryption. Your ISP can see that you are utilizing a VPN and that there is activity on it. Your information is as protected as the end focuses. That is, whether you think you can trust whoever you get your VPN from, your information is recovery.
