In Google Analytics, a session is a group of hits recorded for a user in a given time period. A hit is a user's interaction (pageview, screenview, event, transaction etc) with your website that results in data being sent to the Google Analytics server.

A session is characterized as a gathering of communications one client takes inside a given time allotment on your site. Google Analytics defaults that time allotment to 30 minutes. Meaning whatever a client does on your site (e.g. peruses pages, downloads assets, buys items) before they leave breaks even with one session

New sessions is the number of sessions from new users. So another way to ask the question is how does Google track new users. There are several ways that the Google Analytics (GA) tracker could be tracking new users, and I think it depends on a couple of things, such as the technology (device, browser), GA settings, country/region specific laws and regulations.

The period of time a user is active on your site or app. By default, if a user is inactive for 30 minutes or more, any future activity is attributed to a new session. Users that leave your site and return within 30 minutes are counted as part of the original session.
