Anything that doesn't take away value from the search users experience.

Think of it this way, if you're link building and you wouldn't want to explain to Google what you are doing then don't do it.

For a start you might want to remove the anchor text from your signature, if you over optimize you'll get a big slap ;).

hard to say but what normal optmizers are do is building back links and placing adds, update site content and all other on page techs

Ethical SEO techniques is simply following Google guidelines upon acquiring links, Google wanted links that came from authority and relevant websites, unique and quality content is also a big factor.
